Wild Smoked Sea Trout

Our wild seat trout is sourced in small quantities from licensed nets on the east coast of Scotland. Each seat trout is individually cured for up to twenty hours by hand using a light sale cure.

It is then smoked gently over whisky barrel chips and oak dust for another twenty hours before being chilled for a minimum of 1 day to complete the maturing process
